Local ingredients and sourced liquors will ensure that you can imbibe and take your rest game to the next level. Garden grown mixers pair nicely with our super chill bar that overlooks the pool, pond and woods. Where else would you rather be?
Mike, Our Cocktail Director, makes booze forward cocktails that draw from a carefully curated body of spirits.
They favor savory to sweet, but embrace all that helps to solve for balance.
We love earthy, spicy, vegetal agave spirits and wildly delicious rums. Big fans of Calvados and rich, casked brown liquor. Come Summer, we draw heavily from the bountiful Catskills, right down to our very own cutting garden. But year round, our house mixer program is the backbone of our seasonal creations and so many popular drinks. Our goal at Rest is to create a deeper engagement with what you like and perhaps show you something new.

The restaurant serves dinner Thursday through Saturday from 5 pm to 8:30 pm, and the bar is open Thursday through Saturday from 5 pm to 11 pm. Outside those hours, hotel guests can ask at the lobby desk, and our team will be happy to assist.

The bar favors spirit-forward, savory cocktails built on agave spirits, rums, Calvados, and aged brown spirits. Mixers are made in-house, and in summer many ingredients come from the hotel's own cutting garden. Mocktails and curated wines are also available.
